Whole Wheat Maple Snickerdoodles

1/4 cup unsweetened applesauce
1/4 cup butter
3/4 cup brown sugar
1 egg
3 tablespoons real maple syrup
1 1/2 cups whole wheat flour
1 tablespoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon baking powder

Pre-heat oven to 350°

Cream/mix together applesauce, butter and brown sugar. Add egg and syrup, mix well.

Mix flour, cinnamon, baking soda and baking powder. Add the dry ingredients to the wet ingredients, mix thoroughly.

Mix 1/4 cup granulated white sugar and 2 tablespoons cinnamon. Form dough into one inch balls, roll in cinnamon sugar mixture and place on lightly greased baking sheet. Flatten balls slightly and bake for 8-10 minutes at 350°.

Chewy Chocolate Chip Oatmeal Cookies

Ingredients:
1 cup butter, softened
1 cup packed light brown sugar
1/2 cup white sugar
2 eggs
2 teaspoons vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon salt
3 cups quick-cooking oats
1 cup semisweet chocolate chips

Directions:
1. Preheat the oven to 325 degrees
2. In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the quick oats and chocolate chips. Drop by heaping spoonfuls onto ungreased baking sheets.
3. Bake for 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Cherry Macadamia Oatmeal Cookies

I started from this recipe for Oatmeal Cranberry cookies.

Ingredients:
2/3 cup unsweetened applesauce
2/3 cup packed dark brown sugar
1 teaspoon vanilla extract
2 eggs
1 1/2 teaspoon baking soda
1 pinch salt
1 teaspoon cinnamon
1 2/3 cups whole wheat flour
1 cup quick oats
2/3 cup dried cherries, chopped
1/2 cup macadamia nuts, chopped

Directions:
Pre-heat oven to 350 F

Mix applesauce and sugar throughly. Add eggs and vanilla, mix well. In a separate bowl mix flour, baking soda, salt and cinnamon. Stir dry ingredient mixture into wet ingredient mixture. Stir in oats. Fold in cherries and nuts.

Drop spoonfuls onto a greased cookie sheet (if you used butter instead of applesauce, don't grease the cookie sheet) and smash them down a bit, these cookies don't seem to spread too much.

Bake for 8 to 10 minutes. It's okay if the cookies still look a bit moist, that's just the applesauce.

Makes about 2 dozen
